Curried Pigeon (serves 2 – 3 people)


 

(Using leftovers)

Ingredients

  • 8 oz cooked pigeon meat    
  • 2 potatoes
  • 1 onion       
  • seasoning
  • 2 cloves garlic     
  • 2 teaspoons desiccated coconut
  • ½ teaspoon turmeric    
  • stock or water
  • 1 teaspoon chilli powder    
  • ½ teaspoon powdered ginger
  • 2 oz butter

Method

Chop the onion and  garlic and fry with the turmeric, chilli powder and ginger in the hot butter for several minutes.  Add the diced cold meat, and diced uncooked potatoes with the rest of the ingredients and approximately ½ pt stock or water.  Simmer steadily for about 35 minutes, until potatoes are soft.

Serve with boiled rice and chutney on side dishes.
